Almond Choc Chip Cookies

Almond Choc Chip Cookies

This recipe is my daughter's favorite. It is very versatile and I have altered it over the years. So, I'm going to give you options as to how you want to make them. You can choose dense and chewy or light and crunchy. Let me know your preference. This recipe is very rich. It has a lot of fat. If you are trying to lose weight, don't eat the whole batch at a time.

Dry Ingredients 🍪

1.5 cups Organic Almond flour

1.5 cups Organic Einkorn Flour (or whole wheat flour, or glute-free flour of choice)

Note: For a chewier cookie, omit the wheat flour and use all Almond Flour. Be aware that this will substantially increase the fat content.

1/2 tsp Baking soda

1/2 tsp Ground cinnamon

1/2 tsp Rock salt (optional - omit if you are salt-free)

1/2 cup Sweetener of choice (I use date powder)

1/2 cup Plant-based choc chips

Wet Ingredients 🍪

2 Tbsp flax meal mixed with 6 Tbsp warm water (sub for Chia Seeds)

6 Tbsp Almond Butter

6 Tbsp Apple Sauce (90gm)

Method

  1. Mix all the dry ingredients together in a bowl.

  2. Soften the nut butter in the microwave for 30 seconds. Don't make it too hot or it will melt the chocolate chips when you mix them in.

  3. Add the rest of the wet ingredients to the nut butter.

  4. Gently fold the wet ingredients into the dry.

  5. Pour the dough onto a floured surface and knead till everything is combined (it will be sticky).

  6. split the dough in two and wrap in plastic wrap. Refrigerate for at least 30 mins to solidify the nut butter and give the dough structure.

  7. While it is cooling, turn the oven to 375˚F (200˚C) and use this time to clean up your kitchen (that's why I did).

  8. Take 1 dough ball from the fridge and roll out to 1/4" (1/2cm) thickness. Use a cookie cutter to make 3" (7cm) rounds. Repeat with the other half of the dough.

  9. Place on a baking sheet lined with silicon or baking paper.

  10. Bake for 12 minutes if you like then chewy and 15 minutes if you like them crunchy.

  11. Wait until they are cool before eating or the chocolate chips will burn your mouth.

Here is a quick checklist to get you started with your plant-based journey.

Remember, imperfect action beats inaction, get started and keep trying.

  • Write a list of plant-based foods you already like. (Check out my free list HERE).

  • Look up your favorite recipes and work out ways to swap animal products for plant-based ingredients.

  • Be open to new flavors and try new things.

  • When at restaurants, order the plant-based option.

  • Instead of dairy milk, use plant-based milk in your coffee and cereal. If you don't like the taste, try another brand.

  • Unless you want to, there's no need to swap out everything all at once. One step at a time is fine. Eventually, you will crowd out all the unhealthy animal products with healthy plant-based foods.
